Waipara Groves Olive Oil

Waipara Groves takes advantage of the unique characteristics that the cool climate imparts in the olives to produce a unique combination of flavours. As olives ripen and oil content increases, the oil’s flavour tends to mellow and the healthy anti-oxidants decrease. By picking the olives somewhat earlier than usual, we sacrifice some oil yield but produce oil high in anti-oxidants with a robust and fruity flavour.
The olives are harvested either by hand or using mechanical means and are captured by nets to ensure that they do not touch the ground. The olives are then transferred to bins for transport to the processing plant – less than 15 minutes away. The olives are processed without delay in the Company’s own olive press.
During the first stage of processing the olives are prepared for processing and any leaves collected with them removed. The olives are reduced into a paste, which is gently kneaded to release the oil. After an hour’s kneading the paste is fed to a high-speed centrifuge where the oil is separated from the solids and vegetable water.
The olive oil released from the centrifuge then goes through a secondary decanter before being transferred into a stainless steel tank to allow any remaining solids to settle out. It is then decanted and stored under food fresh nitrogen, which minimises oxidation of the oil during storage.

The Tuscan Blend – a superb blend of Frantoio, Leccino and Pendolino planted, picked and pressed together. This oil has consistently proved to be our most popular Extra Virgin Olive Oil. This EVOO has a real olive fruit taste with hints of butter but also a medium to strong grassy overtone with moderate pepper.
The Grove Blend – featuring mainly Spanish varieties, the Grove Blend has a medium body, smooth texture, and sweet, buttery taste. It finishes with a peppery kick that gives it an extra layer of flavour and when warmed has the sweet aroma of ripe tomatoes. It is an excellent choice for use as an everyday olive oil, working beautifully in sauces and salads, and is a delicious accompaniment to the more flavourful balsamic vinegars.
Barnea – Originally from Israel, Barnea has a rather mellow creamy flavour with a mild peppery after taste – a perfect accompaniment to bruschetta.
Koroneiki – is a simply superb EVOO that lends itself to fish dishes and any salad with lots of ripe tomatoes, feta cheese, black olives and sliced sweet red onions. This variety originally comes from Greece and Crete and has proved to be a premium quality, consistent performer.
